Palila Espresso & Breakfast Blend

Inspired by the Hawaiian honeycreeper it's named after, Palila blend captures the essence of a well-rounded, rich and versatile coffee. It's also the coffee which fuels the warmth and aloha at our Hilo café, served as espresso and batch brew daily alongside Hawaiian Harmony.

This medium-dark roast blend combines direct trade Red Bourbon sourced from Guatemala, alongside coffees from South America. Its plush, satiny mouthfeel and balanced sweetness make it as versatile for any brewing method, from espresso to drip and everything in between.

Palila's nutty, cocoa-forward profile pairs beautifully with milk for espresso-based drinks, while its complexity shines through as a straight shot or batch brew. In addition to being served and beloved by guests at our Hilo café, it's the coffee served daily by our resort partner, Mauna Lani Auberge, in Kona.

Gently bright, balanced. Hazelnut, cocoa nib, goji berry, candied violet, oak in aroma and cup. Plush, satiny mouthfeel; quiet, nutty and cocoa-toned finish. As cappuccino, richly nut-toned with sweet floral impulses.

A friendly, inviting, well-rounded espresso blend — nutty and sweet in the straight shot and richly cocoa-toned in milk.

Brew Recommendations:

For drip and pour over, we recommend a brewing ratio of 16:1 (16 grams of water per gram of coffee) and a water temperature of 200°F. If needed to increase extraction, increase water temperature to 205°F
