Coffee Variety & Process: Maragogipe, Chardonnay Yeast Processed
Introducing a new giant Maragogipe coffee with flavors so sweet and complex it nearly sparkles with mineral effervescence and notes of dried apricot, lychee, amber, hop flowers, tangerine in aroma and cup.
On the cupping table, this explosively aromatic coffee dwarfs the rest. We recommend giving yourself ample time and space to savor the expansive characteristics -- this big coffee may consume all of your attention.
Ka'ū Cloud Maragogipe is the result of a 2-3 year long collaboration between Brandon & Kelleigh, co-founders of Big Island Coffee Roasters, and Miles, founder of Silver Cloud Coffee Farm. Our goal with this collaboration was to enhance aromas, highlight sweetness, and increase both the intensity and depth of flavors of this Maragogipe variety coffee.
Throughout the harvest season we trialed a variety of wine yeasts to help break down and remove the mucilage via controlled fermentation. The side effect of using certain types of yeast is that they impart delightful characteristics to the coffee. What we found in our experiments is that one particular yeast turned up the volume on all of this unique variety's features. It's an exceptional representation of the critical role microbiology plays in developing high quality coffee.

Rich-toned, complex, fruit-driven. Dried apricot, lychee, amber, hop flowers, tangerine in aroma and cup. Crisp, apple-like acidity; plush, viscous mouth feel. Finish focused around notes of dried apricot and amber with compelling floral undertones.
A resonant, richly sweet, stone fruit-driven Maragogipe grown in Ka'ū and processed experimentally with the addition of wine yeasts to the fermentation — juicy, multi-layered, uniquely composed.
Produced by Miles Mayne of Silver Cloud Farm, entirely of the Maragogipe variety of Arabica, and processed by the washed method with the addition of yeasts to the fermentation step. The yeast strain for this coffee was selected in collaboration with Big Island Coffee Roaster's co-owner Brandon von Damitz in a process of experimentation with various yeast strains, resulting in one strain that they could produce at scale.
Silver Cloud Coffee Farm sits high on the slope of Mauna Loa in the majestic, misty Wood Valley. We sometimes describe Ka'ū coffees as hidden gems. They display a great range of flavors and are often purchased by specialty coffee lovers and locals alike. Most Ka'ū coffee farms are located between 1500' – 2100' above sea level and exhibit tasting notes similar to many Central American coffees: syrupy mouthfeel, complex fruit flavors, and warm flavors like brown sugar and vanilla.

Big Island Coffee Roasters sent in a collaborative coffee in partnership with farmer Miles Mayne. This Ka'u Cloud Maragogipe 95pt coffee is the result of co-founder Brandon von Damitz and Mayne’s many yeast experiments over three harvest seasons. The version they landed on uses K1-v1116 yeast from Lalvin, with anaerobic fermentation for 72 hours. This uniquely composed, big-beaned Maragogipe cup is driven by notes of stone fruit, hop-like florals, resiny amber and distinct tangerine.
Co-founder Kelleigh Stewart acknowledges the challenges of working exclusively with Hawaiʻi-grown coffees, but also speaks to the opportunities it affords: “When people ask, ‘Why is Hawaiʻi coffee so expensive?’ this initiates a dialogue for deeper engagement and understanding of the supply chain. There’s so much more supply chain transparency and ethics with Hawaiʻi coffees. And the chain is much shorter because there’s little room for middle people. And a much greater percentage of the purchase price goes directly to the farmer. … So, while dealing with an ‘expensive’ product poses challenges, it’s easy for us to be proud of our farmer relationships, knowing we’re fostering an ethical, transparent supply chain. I often turn the question around and ask people, ‘Why is the rest of the world’s coffee so cheap and undervalued?’”
