Coffee Variety & Process: Red Bourbon, processed via the washed method using controlled fermentation with Vin-13, a champagne yeast.
Kona Red Bourbon reminds us of Black Forest cake, thanks to its dark chocolate and cherry notes. With abundant sweetness and intense aromatics, this coffee is as lush and elegant as it is rare to find in Hawaii. And despite its name, Red Bourbon (pronounced 'boar-bone') has nothing to do with the adult beverage.
Red Bourbon is a coffee variety known for its natural sweetness and lush fruit flavors. This lot was grown by Franck of Uluwehi Farm at an elevation of 1800ft in the renowned Kona Coffee Belt. It was processed via controlled fermentation using a wine yeast commonly used to ferment Rosé, Viognier, and Chardonnay. By using this wine yeast, Franck is 'dialing in' the flavor profile of this coffee in the same way that vintners do with wine.
As one of our best-selling and most requested, Kona Red Bourbon is a special coffee. Rare, refined, and worth seeking out — this is Kona coffee at its most expressive.
Blind Assessment: High-toned, richly floral and impeccably balanced. Red plum, lilac, cocoa nib, lemon verbena and sugarcane in aroma and cup. Bright, juicy acidity; plush, satiny-smooth mouthfeel. The finish is long and graceful, with notes of layered stone fruit, sweet citrus and delicate cocoa.
Notes: Produced at Uluwehi Farm, from trees of the Red Bourbon variety of Arabica, and processed by the washed method (fruit skin and pulp removed from before drying), with addition of wine yeasts to the fermentation step.
