Tasting notes (medium dark or dark): At darker roast levels our employees exclaim that it tastes just like a fudge and nut brownie. Notes of mocha, dense fudge, roasted hazelnut butter, and juniper.

SUPER SPECIALTY KA'U GREEN COFFEE
Grown just south of Kona in the district of Kaʻu, this Wood Valley Single Estate Ka'u coffee is the very definition of specialty Hawaiian coffee, and is one the best Ka'u coffees we've had the pleasure to serve.
The ripe red coffee cherry is hand-sorted and meticulously tended on a high elevation farm. The result is an intensely aromatic, syrupy sweet, and balanced cup.
BACKGROUND: COMMITMENT & CRAFTSMANSHIP
On a small, lush farm in the heart of majestic Wood Valley at 2300’, Alla and Rus - the couple pictured here - and farm owner Dennis have spent the past three years doing much of what we did our first years in Puna: pruning coffee trees, fertilizing, pulling weeds, rehabilitating the field day by day. Simultaneously, they've been harvesting and processing coffee, experimenting, and testing ways to improve quality.
We’ve tasted this lot throughout the years and, while it’s been very good, this season’s crop is at another level: intensely fragrant, juicy, ripe, and sweet.
And so to do this great Ka'u coffee justice, and as is our practice when we bring in new Hawaiian coffees, we've carefully designed the roast profile to reveal the exotic, inherent, hidden flavors. Freshly milled and then roasted, we cupped 10 different roast profiles before selecting our favorites. And that is what we're now offering here.

Notes: Produced on a small farm in Wood Valley at an altitude of 2,300 feet in the Kau coffee growing region and processed by the wet, or washed method. Big Island Coffee is an award-winning coffee roaster and coffee farm operated with hands-on passion by Kelleigh Stewart and Brandon von Damitz.
Blind assessment: Richly floral- and nut-toned. Freesia, almond brittle, baking chocolate, black cherry, fresh-cut oak in aroma and cup. Deeply sweet structure with pert acidity; full, satiny-smooth mouthfeel. Finish consolidates to almond brittle and freesia.
The bottom line: A higher-altitude Kau coffee characterized by spicy floral and sweet nut tones.

If your coffees arrive damaged, please send a photo of the box in the condition you received it within 7 days to email@example.com. We'll send a replacement.

Definitely one of the best from Hawaii I have tasted. Very balanced flavors, wonderfully rich but subtle about it. Roasted it medium dark.
So, I have been roasting and tasting coffee from all over the world for several years now. This is my FIRST Hawaii coffee experience. Sure, I thought the Kona Blends from TJ Maxx were legit when I first began to drink coffee but after learning true coffee culture and seeing the misleading mishaps in the industry I now know better. I chose this coffee because it seems to be atypical from traditional "Hawaii" coffee descriptions. I roasted it to the very first stages of second crack and then dumped it. I followed my standard roasting profile for the larger beans and let it rest for a few days. After all, I have NEVER spent this much money on ANY green coffee. The first pot I made on our home Moccamaster was fragrant and I was so excited to sip! The flavors about knocked my tongue outta my mouth! BIG, HUGE.....GINORMOUS flavors! I have to say the intense fudgey syrup flavor was the first thing I experienced. Then a smooth honey feel on my tongue. I can taste the hazelnut in the aftertaste. There is no sheen to the bean whatsoever so I believe this to still be a true Medium roast. I have another turn so I may experiment with the lighter side of the coffee. I would never have attempted to let these babies potentially get too dark due to cost so I will leave this review as the darkest I am willing to go! Thank you for the experience!
